Lesson Summary:
Lesson Content: 117.1 Personal recipes refer to one's own recipes, i.e. family recipes.
117.2 In some of Beijing's hutongs, there hideaway private kitchens* which serve many signature dishes and are frequented by regular diners.
117.3 Normally, private kitchens don't put up advertisements. They are only known to people who know the owner, thus shrouding them in an air of mystery [lit. adding mystery to their character]. These are the traditional, classic, private kitchens.
117.4 We found one such private kitchen tucked away in a small and quiet Siheyuan - "Hai Tang Ju". The courtyard is not very big, and is graced by the presence of a cherry-apple tree. In the surroundings, there are some trees from which hangs a bird cage. A pair of birds chirp away happily.
117.5 During the day, the rooms here are filled with an air of silence, no different from any other regular courtyard.
117.6 In contrast, the evenings are busy, bustling with diners who dine away.
117.7 The clientele comprisemostly friends of the owner or people who have been recommended to this place.
117.8 Those who come to dine at "Hai Tang Ju" love the feel of this place, and although it is not a residence, it has an extremelyhomely feel to it.
117.9 The locations of most private kitchens are relatively secluded, making it difficult to find them. Some of the private kitchens can be located through online searches; others, we get to know via word-of-mouth from regular diners; while still others, we come know of only by a stroke of chance.
117.10 In any case, private kitchens emphasize "friends bring more friends." It is possible that in the very beginning only a few friends drop by to feast. Later, through word-of-mouth, new friends come along, and so private kitchens gradually come to have their regular set of clientele.
